What Makes This Raseeli Karachi Chicken Biryani Different

Chicken only 60 percent done. The chicken is cooked to about 60 percent, because the rest cooks on dum. Fully cooked chicken would break.

A jhol of yogurt and spices. A thick batter of yogurt, food colour, nutmeg, cardamom and mace goes along the sides of the pot for aroma.

Tomatoes and herbs around the sides. Two bunches each of coriander and mint and 1-1.5 kg of tomatoes go around the gravy.

Sela basmati in two layers. The first 2.5 kg of rice, 60 percent cooked, is levelled over the gravy. The second 2.5 kg, 80 percent cooked, goes on top.

Potatoes. The video says potatoes are optional but sold with all counter biryani in Karachi.

Ingredient Notes

  • Rice: sela basmati, soaked a little. The counter biryani in Karachi uses sela.
  • Spices: the caption gives the quantities in teaspoons for 5 kg of chicken.
  • Salted water: take some out of the rice pot first and add about 1.5 litres of it on top before the dum.

Notes

Store leftover biryani in an airtight container in the refrigerator for up to 3 days. Reheat it in the microwave or oven before serving.

Raseeli Karachi Chicken Biryani Problems and How to Fix Them

  • The chicken breaks: it was cooked too long before the dum. Stop at about 60 percent.
  • The rice sticks together: a little raw oil on top before mixing keeps the grains apart.
  • The colour is uneven: mix the biryani well after the dum; the better you mix it, the better the colour.

Serving and Storing

Serve hot with raita and salad. Leftovers keep for 2 days in the fridge; reheat covered with a splash of water.
