What Makes This Karachi Famous Raseeli Beef Biryani Recipe Special

Large Quantity of Beef: The generous amount of beef used in this recipe, 3Kg to be exact, ensures that the biryani is not only flavorful but also filling. This large quantity of beef allows for a more intense flavor profile, as the beef is cooked in a way that extracts all its natural juices and tenderness, making each bite a delight. The beef’s tenderness and flavor are balanced by the perfectly cooked rice, creating a dish that’s both satisfying and refined.

Perfect Rice to Beef Ratio: The unique ratio of 2Kg rice to 3Kg beef is what sets this biryani apart from others. This ratio allows for the perfect balance of flavors and textures, with the rice absorbing all the juices and flavors of the beef, resulting in a dish that’s both aromatic and delicious. The rice, cooked to perfection, provides a beautiful contrast in texture to the tender beef, making each bite a sensory experience.

Authentic Cooking Technique: The cooking technique used in this recipe is authentic and traditional, ensuring that the biryani is cooked to perfection. The slow cooking process allows for the flavors to meld together, resulting in a dish that’s rich, flavorful, and aromatic. The technique of layering the rice and beef, and then steaming it, helps to preserve the natural flavors of the ingredients, resulting in a biryani that’s truly unforgettable.

The Complete Karachi Famous Raseeli Beef Biryani Recipe

Note: In the video, this biryani is cooked in a commercial deg with 3kg beef and 2kg rice. The recipe card below is the same recipe scaled down for home cooking — 1.5kg beef and 1kg rice (serves 8). The ratio and taste are exactly the same. For a bigger gathering, simply double all the ingredients.

Tips Before You Start

Don’t Overcook the Beef: It’s essential to cook the beef until it’s tender, but not overcooked, as this can make the beef dry and tough. If you overcook the beef, it will lose its natural juices and tenderness, resulting in a biryani that’s dry and flavorless. Cook the beef until it’s just tender, and then let it rest before adding it to the biryani.

Use the Right Type of Rice: The type of rice used in this recipe is crucial, as it affects the overall texture and flavor of the biryani. Use long-grain basmati rice, as it’s the best type of rice for absorbing the flavors of the beef and spices. Other types of rice may not absorb the flavors as well, resulting in a biryani that’s bland and unappetizing.

Don’t Rush the Cooking Process: The cooking process for this biryani is slow and deliberate, allowing for the flavors to meld together and the rice to cook to perfection. Rushing the cooking process can result in a biryani that’s undercooked or overcooked, with the flavors not fully developed. Take your time, and let the biryani cook slowly, allowing the flavors to develop and the rice to cook to perfection.

Use Fresh Spices: The spices used in this recipe are essential, as they add depth and flavor to the biryani. Use fresh spices, as they will provide the best flavor and aroma. Old or stale spices can result in a biryani that’s bland and unappetizing, so make sure to use fresh spices for the best results.

Storage and Serving

The Karachi Beef Biryani can be stored in the fridge for up to 3 days, and reheated when needed. To reheat, simply microwave the biryani for a few minutes, or reheat it on the stovetop with a little water. The biryani is best served hot, garnished with fresh herbs and a dollop of raita, if desired. The serving temperature is crucial, as it affects the overall flavor and texture of the biryani. Serve the biryani hot, and enjoy the flavors and textures of this delicious dish.

Frequently Asked Questions

How do I prevent the rice from becoming mushy?

To prevent the rice from becoming mushy, it’s essential to cook it to the right consistency. Parboil the rice until it’s only 80% done — the grain should still have a slight bite in the centre — because it will finish cooking on dum. Also, make sure to use good quality long-grain basmati rice, as some types of rice are more prone to becoming mushy than others.

Can I use chicken instead of beef?

Yes, you can use chicken instead of beef, but keep in mind that the flavor and texture will be different. Chicken cooks much faster than beef, so skip the long tenderising step and cook it only until 80% done before layering. Bone-in pieces like thighs and legs work best for biryani.

Can I make the same 3kg deg quantity at home?

Yes! The recipe card uses 1.5kg beef and 1kg rice for home cooking, but the ratio is exactly the same as the deg version. To make the full commercial quantity, simply double every ingredient — 3kg beef, 2kg rice — and use a large pot or small deg. Cooking time for the beef will increase slightly with the bigger quantity.

How do I make the biryani more flavorful?

To make the biryani more flavorful, use fresh whole spices and a good garam masala. Also, use fresh herbs, such as coriander and mint, to add freshness and depth to the biryani. Finally, use a high-quality basmati rice, as it will absorb the flavors of the spices and herbs better than other types of rice.

Can I make the biryani in advance?

Yes, you can make the biryani in advance, but it’s best to cook the beef masala and rice separately and then assemble and give dum just before serving. This will help prevent the rice from becoming mushy and the beef from drying out.

How do I serve the biryani?

Serve the biryani hot, garnished with fresh coriander, mint, and birista. Pair it with a bowl of raita and a simple kachumber salad — the cool, fresh sides provide the perfect contrast to the rich and flavorful biryani.
