Mutton Chapli Kabab (Half Kg Peshawari Style)

Half kg (500g) mutton-only chapli kabab recipe — traditional Peshawari style with egg mixed in, coarsely crushed anardana, and 20-25% fat mutton. Makes 5-6 kababs, serves 2-3 people. Perfect small home batch.

Ingredients
  

  • 500 g mutton mince 20-25% fat, coarsely cut
  • 1 large onion 150g, finely chopped and squeezed dry
  • 1 medium tomato deseeded and finely chopped
  • 2-3 green chilies finely chopped
  • 1 egg mixed INTO the mixture, not on top
  • 1.5 tbsp ginger-garlic paste fresh
  • 2 tbsp corn flour or gram flour besan
  • 1.5 tbsp coriander seeds coarsely crushed
  • 1 tsp cumin seeds coarsely crushed
  • 1 tbsp anardana dried pomegranate seeds, coarsely crushed
  • 1 tsp red chili flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garam masala optional — Peshawari purists skip this
  • 0.5 tsp kasuri methi optional
  • Oil for shallow frying
  • Fresh coriander and lemon wedges for serving

Method
 

Step 1: Prepare Ingredients
  1. Squeeze water from chopped onion using a cloth. Deseed and finely chop
  2. the tomato. Coarsely crush anardana, coriander seeds, and cumin seeds
  3. in a mortar.
Step 2: Mix Gently
  1. In a large bowl, combine mutton mince, squeezed onion, chopped tomato,
  2. green chilies, ginger-garlic paste, beaten egg, corn flour, all crushed
  3. spices, salt, black pepper. Mix gently by hand for 5-7 minutes only —
  4. do NOT over-knead mutton.
Step 3: Chill for 30 Minutes
  1. Cover the bowl tightly and refrigerate for at least 30 minutes. This
  2. firms up the mutton fat and lets flavours meld. Do not skip this step.
Step 4: Shape with Wet Hands
  1. Wet your hands, divide the mixture into 5-6 portions, and flatten each
  2. into a thin round patty about 1 cm thick and larger than your palm.
Step 5: Fry on Medium Heat
  1. Heat 1-2 inches of oil in a wide tawa or karahi on medium heat. Fry
  2. patties 4-5 minutes per side until deep golden brown. Drain on paper
  3. towels. Serve immediately with naan, sliced onions, and lemon wedges.

Notes

Use hand-minced mutton with 20-25% fat for juiciest kababs. Do NOT over-knead — mutton proteins toughen quickly, so 5-7 minutes gentle mixing is enough. The 30-minute chill is essential for structure. Leftover raw shaped patties freeze well for 1-2 months.
