Method
Preparation of Base
- In a large pot, bring 500ml of full-fat milk to a rolling boil. Once it boils vigorously, immediately reduce the flame to its lowest setting to prevent scorching.
- Add 1kg of sugar to the low-simmering milk. Stir continuously until the sugar is completely dissolved, ensuring no granules remain, creating a smooth, sweet foundation.
- In a separate small bowl, whisk 3 tablespoons of Doodh Dulari powder or cornflour with a small amount of cold milk or water to create a smooth, lump-free slurry.
- Gradually pour the prepared slurry into the simmering milk mixture while stirring vigorously. Continue stirring until the mixture thickens to a silky, luscious consistency without any clumping.
- Remove the thickened milk mixture from the heat and allow it to cool down slightly.
Preparing Add-ins
- Boil the two packets of colorful vermicelli separately in water until they are tender. Drain the vermicelli and rinse them thoroughly under cold water to stop the cooking process and prevent stickiness.
- Ensure the 1kg fruit cocktail is thoroughly drained of its syrup. Excess liquid can thin out the Doodh Dulari, so a good drain is essential for the best texture.
Assembly and Chilling
- Once the thickened milk mixture has cooled, gently fold in 500ml of fresh cream.
- Carefully incorporate the drained fruit cocktail, prepared colorful vermicelli, 500g of colorful mithai (cubed or crumbled), and 500g of rabri into the creamy base. Mix gently to combine all ingredients without mashing them.
- Transfer the Doodh Dulari mixture into a large serving dish or individual bowls. Cover it and refrigerate for at least 4-6 hours, or preferably overnight, to allow the flavors to meld and the dessert to chill thoroughly.
- Before serving, garnish generously with chopped 100g almonds, 100g pistachios, and 50g chocolate chips for an appealing presentation and added texture.

Doodh Dulari is best served thoroughly chilled to allow the flavors to meld and achieve its optimal creamy texture. Store any leftovers in an airtight container in the refrigerator for up to 2-3 days. Garnish generously with chopped almonds, pistachios, and chocolate chips just before serving for an appealing presentation.
