Ingredients
  

The Base & Vegetables:
  • 1 packet Egg Noodles Boiled
  • 1 small Onion Finely sliced
  • 1 cup Cabbage Finely shredded
  • 1/2 cup Carrots Julienne cut
  • 1/2 cup Capsicum Finely sliced
  • 2-3 tbsp Cooking Oil
  • 1/4 cup Spring Onions Chopped
  • 1/4 cup Fresh Coriander Chopped
The Chicken (Marinated & Fried):
  • 250 g Chicken Boneless Small strips
  • Salt to taste
  • White Pepper Powder
  • Black Pepper Powder
  • Soy Sauce & Chili Sauce for marination
The Secret Sauce Mix:
  • 1 tsp Dark Soy Sauce
  • 1 tsp Chili Sauce
  • 1 tsp Oyster Sauce Mama Sita’s brand recommended
  • 1 tsp Chinese Chili Oil The Main Secret
Dry Spices:
  • 1/4 tsp Chicken Powder
  • 1/4 tsp White Pepper Powder
  • Salt to taste
  • 1/2 tsp Sugar to balance flavors

Method
 

Step 1: Preparing the Chicken
  1. Sabse pehle chicken ko namak, kali mirch, safed mirch, soy sauce aur chili sauce ke saath marinate karein aur fry karke side par rakh dein.
Step 2: Sautéing the Aromatics
  1. Ek bade wok ya kadhai mein cooking oil garam karein aur bareek kati hui pyaaz ko sirf 15-20 seconds ke liye sauté karein. Pyaaz ka crunch barkaraar rehna chahiye.
Step 3: Stir-Frying Vegetables & Chicken
  1. Ab ismein fried chicken, band-gobhi, gajar aur shimla mirch shamil karein. In sabziyon ko 1-2 minute ke liye high flame par sauté karein taake ye soft ho jayein lekin inka rang kharab na ho.
Step 4: Adding Noodles
  1. Uble hue (boiled) noodles ko wok mein dalein aur sabziyon ke saath achi tarah mix karte hue 1-2 minute mazeed sauté karein.
Step 5: The Flavor Explosion
  1. Ab ismein spring onions aur hara dhania shamil karein. Saath hi dark soy sauce, chili sauce, oyster sauce aur sabse zaroori Chinese chili oil shamil karein.
Step 6: Final Seasoning
  1. Sari dry seasoning jaise chicken powder, white pepper, namak aur thodi si cheeni (sugar) shamil karein. High flame par 1-2 minute ke liye tezi se toss karein taake saare sauces noodles par achi tarah lipat jayein.
Step 7: Serving
  1. Aapki garma-garam aur lazeez Chicken Chowmein taiyar hai. Isay mazeed spring onions se garnish karke serve karein.

Chili Oil Secret: Agar aapko bazaar wala taste chahiye to Chinese Chili Oil kabhi skip na karein. Ye kisi bhi bade store se mil jata hai.
